Introduction

A new recipe addition, but one that's been really good for days when we aren't sure what to do. Kinda messy to put the rub on top, but it's ok. Please do check your tenderloin weight, don't be like me and do double the rub on the first one I ever made ...

  • Prep Time: 6 min prep + ~20 min cooking
  • Servings: 4 servings

Ingredients

  • 1.25lb — 1.75lbs / 570g — 800g pork tenderloin
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 1/2 teaspoons salt
  • 1 tablespoon mustard
    • Normally it's ground mustard, but I found using mustard itself works well
  • 1/2 teaspoons onion powder
  • 1/2 teaspoons black pepper
  • 1/4 teaspoons garlic powder
  • 1/2 tablespoons olive oil

Cooking Instructions

  1. Mix all dry ingredients in a bowl (sugar, paprika, salt, onion powder, pepper, garlic powder).
  2. Trim the pork tenderloin of any excess fat/silver skin. Coat with a ½ tablespoon olive oil, then rub the mustard all over. Rub spice mixture on entire pork tenderloin.
  3. Preheat air fryer to 400° F for 5 minutes. After 5 minutes, carefully place pork tenderloin into air fryer and air fry at 400° F for 20-22 minutes. Internal temp should be 145°F.
  4. When air fryer cycle is complete, carefully remove pork tenderloin to a cutting board and let rest for 5 minutes before slicing. Save any juices to serve over sliced meat.
